Raw Vegan Teacup Goji Tarts

Have you always wanted to make one of those seemingly complicated raw vegan style desserts? Intimidated by the the blenders and dehydrators? Well, this recipe calls for your HANDS and a food processor. That’s it!

The great thing about raw vegan desserts is that you get a so many health benefits, it feels like you are eating a decadent bad for you cake, but you are actually eating your way toward good health.

You will need the following for this beauty:

  • 1/2 cup of nuts, preferably walnuts, but hazelnuts or cashews work as well
  • 1/3 cup of pitted dates
  • 1/4 cup of shredded coconut
  • 1 cup of  a mango
  • 1 tablespoon of goji berries (soak them for 5-10 minutes before using)

Put the nuts, the dates and the shredded coconut in the food processor. Use an S-blade knife and process until you get a crumbly mixture.

Take out the crumbly mixture and put it in a bowl. Take a handful and roll it into a ball. If it’s too crumbly then add a few drops of water, it will make it stick together better. Now press into the ball with your thumb to make the “cups”.

NOW for the filling!

This is even easier since all you have to use is a cup of mango chunks and a tablespoon of goji berries. Soak the berries for 5-10 minutes in some water. This will make it easier to blend them into a smoothie filling with the mango. Peel the mango and cut half of it up into chunks. Put the chunks with the goji berries in the food processor or in a blender if that’s what you prefer and blend until the ingredients form a smooth orange substance. Put this orange cream into the nut cups and top them with some shredded coconut and a goji berry for decoration.
