Light Watercress Salad with Figs and a Lemon Thyme Vinaigrette

This salad is a perfect appetizer for an intimate dinner party on a warm summer night.

 

Ingredients:

1 bunch or 2 cups of lightly packed watercress

2 cups of organic red leaf lettuce

4 large black mission figs or 6 dried Turkish figs

1/3 cup thinly sliced red onion

1/3 cup walnut pieces

 

Vinaigrette:

1/4 cup lemon juice

1/8 cup white wine vinegar

1/3 cup extra virgin olive oil

2 tbls dijon mustard

1 tbls fresh thyme

1/4 tsp sea salt

1/4 tsp fresh ground pepper

 

Directions:

To make the dressing, add all ingredients into a mini handheld blender and blend or whisk in a small bowl till the mustard and oil emulsify together. add more salt and pepper to taste.

To assemble the salad, place the watercress, lettuce, onion, and walnuts in a large mixing bowl. Then add just enough dressing to lightly coat the salad. Then take the figs and slice thin or into quarters (if using dried figs then slice very thin). Take five small appetizer plates and place an equal amount of salad on eat plate, then place figs on top decoratively and enjoy!
