Authentic Green Chimichurri

 

Healthy and Low in Sodium!

Just this past weekend, my mom and I went to an AMAZING vegetarian Indian restaurant in Santa Barbara. The aromas were delightful and the food, just as beautiful. I remember us talking about how delicious the chimichurri was and wondering how they got the flavors so precise?

We had both attempted to make it before, with no avail…

So, I decided to find a recipe that used only the purest of ingredients and was not so off the charts in sodium. I came across Kelsey Ale’s blog and she had this delicious recipe, whose outcome was just as beautiful as the picture. Her wholesome and tender vibes are everything we are about and I hope you enjoy this recipe as much as I did:)

 

Green Chimichurri Sauce:

½ cup cilantro, chopped

1 cup parsley, chopped

½ cup olive oil

¼ cup red wine vinegar

2 cloves garlic, crushed

½ tsp cumin

Salt to taste, about ½ tsp

½ tsp crushed red pepper flakes

½ tsp dried oregano

 

Method:

1.Combine all ingredients in a blender or food processor. Pulse until well combined.
2.Enjoy fresh, or store in the fridge up to 1 week.

 

Try Chimichurri as:

 

-A Salad Dressing

-A Condiment for Lean Protein

-A Sauce for Savory Meals

-In soup

-An Indian Flavored Salsa
