Fall into Raw Vegan Pumpkin Pie


Our popular Fall friend, the pumpkin, is a powerhouse food! It’s lush deep orange color is a good way to tell how nutritious it really is, LOADED with carotenoids, which protect you from free radicals. Not only is pumpkin loaded with vitamin A and antioxidant carotenoids, particularly alpha and beta-carotenes, it’s a good source of vitamins C, K, and E, and lots of minerals, including magnesium, potassium, and iron.

What better way to celebrate the harvest season than with some delicious RAW VEGAN PUMPKIN PIE?

Pie Crust Ingredients:
2 cups walnuts
3 dates
1/4 cup of agave

Pie Crust Instructions:

In a food processor put in the walnuts until processed, then add in the dates and agave.  Place into a pie plate and press the mixture into shape.  Set aside in the fridge.  This is an easy all purpose crust that takes minutes to make and is healthy and chemical free, unlike most of the pie crusts you find in the stores.

Filling Ingredients:
2 cups fresh pumpkin.
1 cup pitted medjool dates
1/4 cup agave syrup
1/2 tsp. Sea salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. pumpkin spice

Filling Instructions:

Place all ingredients into the food processor, starting with the pumpkin, and process until smooth and thick. Pour filling into the pie crust and store it in the fridge until you are ready to serve it.  Enjoy!
