Kids love things with texture, it makes it more fun to eat! Instead of the standard beef jerky or turkey, why not try this fun way to do the ever popular jerky!
Ingredients:
1 medium eggplant
1 cup to soak eggplant in
1 tbsp of Sea Salt
2 cups of Shoyu soy sauce or coconut aminos
1/4 tbsp cayenne powder
1/2 cup maple syrup, raw honey or agave, depending on taste.
3 tbsp fresh ginger grated or juiced
Powdered Kelp as garnish
Fresh ground black pepper
Instructions:
Slice eggplant into 1/4 inch thick rounds and length wise, creating long strips, about 2 inches wide. Follow by placing them in a shallow pan, cover them in the water, sprinkle the salt. Stir, then let it soak for 2-3 hours, then drain. Blend remaining ingredients, except kelp and pepper. Cover the eggplant with marinade and toss well. Let this marinate at room temperature for a few hours. You will then need to drain. Place in your oven or food dehydrator tray, dehydrate at 108 degrees for 10 to 15 hours in the oven at 250 for 8 hours. Flip them over in the last hour and let dry. Delicious, nutritious and AMAZING.
