Cherry Flatbread with a Walnut Paste and Watercress

This delicious flatbread is vegan and can be made gluten free.

 

Ingredients:

1 gluten free pizza crust. Udi’s is the best brand for this recipe

 

Walnut paste:

1 cup of walnuts

1/3 cup extra virgin olive oil

1 tbsp minced rosemary

1/2 tbsp dried oregano

1 tsp lemon zest

1/2 tsp sea salt

1/2 tsp fresh ground pepper

 

Toppings:

1/2 cup of rainer cherries

1/2 cup of bing cherries

1/2 cup watercress

1 extra tbsp of olive oil

Cinnamon Drizzle:

2 tbsp agave

1/8 tsp cinnamon

 

Directions:

Place pizza crust in a toaster oven and lightly toast. Do not over cook because it will go back in the toaster for a second time. Place all walnut paste ingredients into blender or food processor and pulse. May have to stop and turn mixture a few times to evenly mix and set it aside. Take cherries and pit and quarter them. Then set them aside. Mix agave and cinnamon together to make the cinnamon drizzle.

Now that everything is prepped,  you can assemble the flatbread. Take crust and evenly spread olive oil over it, especially on edges. Take walnut paste and evenly spread over crust. Then place cherries over top. Place in toaster oven for 5 more minutes, until cherries start to slightly roast. Take flatbread out of oven. Place fresh watercress on top and drizzle with the cinnamon drizzle.
