but these here arent your average Pancakes
Buckwheat is ia power house grain..Correction its a fruit
- Whole buckwheat is a very nutritious food. The protein in buckwheat contains the eight essential amino acids and is also high in lysine. Buckwheat is also rich in many B vitamins as well as phosphorus, magnesium, iron, zinc, copper and manganese. Buckwheat is also a good oil source of Alpha-Linolenic Acid, which is one of the two essential fatty acids we must have to be healthy.

RECIPE:
Ingredients:
1 cup buckwheat
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons arrowroot starch
1 cup + 1 tablespoon coconut milk
3 tablespoons coconut oil
ADD EGGS IF U WOULD PREFER TO INCLUDE THEM
Steps:
Heat the skillet while you prepare the batter.
Sift flour, baking soda, salt, and arrowroot starch into mixing bowl.
Add coconut milk and coconut oil directly to dry mixture. Whisk to combine. Add more coconut milk if mixture seems too thick.
Cook this over medium heat until holes form in the top of the pancake, and the top looks almost set. Flip the pancake, and cook on this side for 15-30 seconds longer. Remove to a cooling rack or hand to a small toddler who is impatiently saying/signing pancake.
Repeat with remaining mix.
